Leftover Turkey Soup Recipe

How many times have you stared at the loads of turkey still left over from the holidays and felt that moment of despair? 

"There's no way we can eat all this before it goes bad!"

 

So? 

Make a turkey soup. 

Then, can it. Freeze it. Or EAT it.

You can literally throw the entire carcass, along with the bits and pieces that no one eats, and leftover meat into a large pot. Add either water or chicken/vegetable stock and boil that bad boy up all day.

Here's what you need ....


Ingredients
Turkey carcass and meat - approx. 2 lbs.
2 liters chicken stock 
4 cups filtered water
5-8 large carrots
5 stalks celery
2 large onions 
1 medium squash/spaghetti squash/pumpkin
2-3 types lentils (preferably dried - 1 cup each)
3-4 bay leaves
salt and pepper to taste
Maggi
3 tbs. Thyme
1 cup Hulled Hemp Seeds



  • Place chicken stock into large pot with turkey carcass and meat.
  • Add 3 of the carrots, 3 stalks of celery, bay leaves, salt & pepper, Maggi and one onion (whole) to the mix
  • Allow to boil up for 15 minutes, then reduce heat until you have a low rolling simmer.
  • Simmer for 4-5 hours.
  • Taste and add Thyme, and spices until satisfied with flavour. 
  • Remove large bits of veg and either mulch into soup pr discard.
  • Chop and add remainder vegetables.
  • Serve or store as needed.

You can freeze this, can it, or just eat it!
