Jalapeño & Apricot Jelly Pork Chops 


I sell The Pampered Chef on the side ... because I love the products, meeting people and FOOD. (Obviously)
They have a recipe for Jalapeño & Apricot preserves baked Brie which is to die for
But I thought - my god - this would taste spectacular on pork!

And, my friends, it does. You are welcome.

Ingredients:

  • 8 - 10 boneless pork chops (not the fast fry, the thicker cut)
  • 1-2 Jalapeños
  • 2 cups apricot preserves
  • 1 tsp. Slat
  • 1 tsp. fresh pepper
  • 1/3 cup grape-seed or coconut oil (heated if C.O.)
  • 3-4 lemons (organic as you'll use the zest as well)
  • 2 tbs lemon zest

Directions:

  1. Using a meat tenderizer mallet,  pound pork chops on both sides, and set aside.
  2. Take the Jalapeños and slice around the stem, and then down the sides. Open and remove membrane and seeds. (NOTE: if you want the heat, it's in the seeds and membrane, add accordingly.)
  3. I used the Petite Pairing knife because it's amazingly sharp and cuts easily through the tough outer skin. Then used the Core and More so I didn't end up with spicy fingertips!! (WASH YOUR HANDS with lemons and soap! Otherwise you may be in for a surprise if you sneeze or rub your face.)

  5. I then used the Chopper - gets that jalapeño super fine and it only takes 30 seconds!
  6. In a small bowl add your chopped jalapeños, apricot preserves, salt, pepper, juice from your lemons and zest from your lemons. Stir with a whisk, and add your oil. (This is a FAB zester)
  7. Using a large freezer Ziplock bag, place all of your pork chops inside, then pour your mixture into it. Let site while your oven or bbq pre-heats.
  8. I cooked mine in the oven at 350F, on the large Bar Pan stoneware pan. 
  9.  Cook for 45 minutes.
  10. After the 45 minutes, turn your oven to BROIL, and broil these bad-boys for about 10 minutes. (make sure your rack is near the center or bottom of your oven or you'll have a smoke show)
