Pressure Cooker Beef Stew Recipe
Mmmmmm Comfort Food.
For us beef stew, like chicken soup, is good for the soul! Sometimes though, our preparation is a little wanting ... as in, I totally forgot to take anything out to thaw.

So - that is where the handy dandy pressure cooker comes in handy! We use the Fagor Pressure Canner that also doubles as a regular pressure cooker.
What you'll need:
- Beef - cubes, loin, stew cuts etc.
- Salt and Pepper or Montreal Steak Spice
- Worcestershire Sauce
- Leeks
- Onions
- Garlic cloves
- Carrots
- 1 large can stewed tomatoes
- Beef broth
The other veggies that go into your stew are COMPLETELY up to you! Be creative, or not, sometimes it's just about what's left in the crisper drawer. Stews are very forgiving - even if those carrots or celery are getting a bit limp, chop 'em up and toss 'er in!
Instructions:
- Heat pot with some oil or butter to Med-High heat, or 170F
- Place beef cuts in with salt and pepper or Montreal Steak Spice, onions & garlic
- Brown all sides of the beef
- Add 2 cups of water
- place lid onto pressure cooker
- Set heat as per your pressure cookers instructions for the specific beef cut, it's usually 170F for 90 minutes.
- Meanwhile prepare all your veggies, because you have the time now!
- Once it's completed the cook cycle, allow to cool and release pressure.
It should look something like this ...
- Add all the veggies
- Turn heat back on to Medium, 150F
- Cover with tomatoes
- Add beef stock until just covering everything
- Bring to a boil, cook until vegetables are cooked as you like them
- Taste and season more to your liking
- You may thicken if you like, with cornstarch and water, but that is up to you!
We served with grainy organic bread and butter ... Enjoy!
